Bourbon must be made from at least 51% corn and aged in new charred American oak. Mash bill, entry proof, warehouse placement, and time in wood determine everything that follows.
◆ Pennsylvania distillery
American rye must be produced from a mash of at least 51% rye grain. American craft and blended expressions follow their own path — producer-driven and increasingly distinctive.
Scotch whisky is distilled in Scotland and aged a minimum of three years. Irish whiskey is triple-distilled and known for its smoothness. World whisky — led by Japan — has produced expressions of remarkable precision alongside traditional regions.
Tequila is produced from blue Weber agave in designated regions of Mexico. Mezcal can be produced from dozens of agave varieties — the spirit category most defined by provenance and terroir.
Gin must be flavored primarily with juniper, but beyond that requirement the category has never been more varied — from bone-dry London Drys to lush contemporary expressions built around single botanicals.
◆ Pennsylvania distillery
Rum is produced from sugarcane juice or molasses and aged in a range of casks. The category spans more flavor territory than almost any other spirit — from light Cuban blancos to dense, funky Jamaican pot still expressions.
